The Cartwrights take young Billy Allen to the Ponderosa, following the death of his mother. The sheriff needs someone to care for Billy until his uncle comes to take custody. Bitter and with a major league bad attitude, Hoss seems to be the only one that is able to penetrate the boy's hostility. When Billy finally starts to open up and trust Hoss, his father Vance breaks out of prison and comes for the boy. Hoss has come to love Billy as a son and does what is necessary to protect him.

Hop Sing: Mr. Hoss, what happened to little boy? What you doing in Hop Sing kitchen?
Hoss (with powdered sugar on face and front of clothing): I just brung your knife back, Hop Sing.
Hop Sing: That so? The little boy take knife. The big boy take a doughnut. (wagging a finger at Hoss) Bad boy, very bad boy.
Hoss (exiting quickly): I, I got some really important things to be doing, Hop Sing. I'll see ya. (edit) Ben: Get your feet off the table!
Joe (taking his feet off the table): Hey Hoss, how do you suppose you and I grew up to be so sweet-tempered with such a grouch for a pa?
Hoss: Oh Little Joe, I reckon he must of been a might more mellower when he was younger. (edit)
