Can someone tell me which episode Hop Sing found the woman in the wild, and named her Missy?

The episode you are probably referring to is "A Lonely Man". This episode was the only to feature Hop Sing as the main character. It is a season 13 episode and since Hallmark has the rights to this season it is unknown if or when it will air again. You may have to wait until it comes out on DVD - which may be a few years.
