    • Miguel: If we can find canned beans at the market, I don't want to play games with beans. Andrea: Canned beans? What in the Tarnation?! Miguel: Okay, okay, never mind.

    • Harold: (of being paired with Lisa) I feel so confident working with her, and so comfortable, I'm predicting victory tomorrow.

    • Lee Anne: Stephen, you gotta sell it! Stephen: I'm trying. I don't think this is our target market!

    • Lisa: Somewhere in the recesses of my mind it's occurring to me that perhaps we didn't think this through; serving seared tuna in the Mission District.

    • Miguel: (Referring to Andrea before the Judges' Table convenes) My friend has immunity here, and I'm up on the chopping block but I feel great and I know she saved me today, so I'm feeling really confident.

    Trivia (7)

    • There were 20 different ingredients for the QuickFire Taste Test Challenge, but only 13 were shown to the viewers. They were: longan, tamarind, hibiscus, agave, konnyaku, chili paste, durian, nopal, kampyo, curry paste, nato, umeboshi plum, and ghee.

    • Lisa: You got the jicama? Harold: (not hearing what she said) What's that? Back at the Top Chef kitchen, Lisa asked Harold in passing if he packed the jicama, but he didn't hear her and she didn't repeat the question, at least in the broadcast version of this scene.
