Once Upon a Time is a fantasy film that revolves around one man's fight to keep his business. Jerry Flynn (Cary Grant) is in danger of losing his theater. He must come up with $100,000 in order to keep it. At the same time, Jerry meets a young orphan, Pinky Thompson (Ted Donaldson), who shows him Curly, his pet caterpillar who is able to dance. Seeing Curly as a way to make money so he can keep his theater, he asks Pinky if he can buy the caterpillar. When Pinky declines Jerry's offer, they decide to become partners. The two end up becoming close friends. But behind Pinky's back, Jerry arranges to sell Curly to Walt Disney. He sends his assistant, the Moke (James Gleason) to steal Curly while Pinky is sleeping. However, Pinky wakes up and when he realizes what the Moke was trying to do, he becomes upset. Jerry's problems get worse; not only is he not on speaking terms with Pinky but Curly is missing.
