In January and February of 1991, James appeared in the Philip Kan Gotanda play The Wash at the Mark Taper Forum, Los Angeles.
In 1994, James served as the stage manager for the Vineyard Theatre's production of Our Town. He also played the part of Sam Craig in the play.
James Saito has appeared as understudy for Andrew Kwong and Eng Tieng-Bin for Day Standing on Its Head at the American Conservatory Theatre & the Manhattan Theatre Club in New York City. He was also an understudy for the pair in The King and I, a Broadway production.
He has appeared in two productions at the Pan Asian Repertory in New York City. Wilderness & Yellow Fever were featured in 1994.
