Anthony starts his journey catching up with friends and former co-workers at Les Halles. He tours the restaurant and gets acquainted with the new layout of the kitchen. We meet Carlos the new head chef who took Antony's place when he left the restaurant. Anthony then explains that his restaurant prepares anything on the menu at any time of the day and this is the definition of a Brasserie. We see Anthony and the rest of the line chefs prepare the towels, knives, and secondary ingredients that are essential to all the main courses they will be preparing for the day. Next we meet the restaurant owner Phillipe and he expresses his nervousness about Tony back in the kitchen after so much time. Next Anthony jumps head into the lunch rush hour. First he explains the line which is the assembly of different stations for cooking in the kitchen. Next Anthony explains how orders are placed from the waiter to the head chef who deals out the orders to the appropriate stations. Anthony laments on how can no longer read the print on the food orders and how age has caught up with him. Anthony struggles with the physical demands mainly bending constantly to reach into a low sitting refrigerator he can't see into. After the lunch rush Anthony leaves unannounced to get a quick beer and Carlos is not pleased about Tony's disappearance. Next we meet Tim legendary Les Halle head waiter. Before the dinner rush Anthony and the line chefs have a staff dinner. This is where a home cooked meal is prepared just for the staff to dine on exclusively. In the final segment of the show Anthony tackles the dinner crowd. We see Tim work the crowd using charisma and charm to woo the customers. Anthony gets his friend Eric Rupert a three star Micheline awarded chef of world fame. Eric is perfect in execution despite being out of his element in such a busy kitchen. Anthony laments about being pulled off the line, burning himself, cutting himself or passing out but not wanting to embarrass himself. He kicks into overdrive and and out performs himself to Carlo's delight. At the end of the night Carlos lets Anthony and Eric off early and the three joke about how hard it was for a slow night.
