When Debbie arrives for her blind date with Shawn, he is playing the piece of classical music he found in the purse. He tells her to close her eyes "you can actually see spring, animals awakening from their winter rest, flowers blossoming into full bloom." The reason for that description is the classical piece being played is the "Spring" concerto from The Four Seasons by Antonio Vivaldi(1723).
Remember The Beard? Cory: There is no Debbie! Shawn: Somewhere there's a Debbie.
Jack: Who are you talking to? Eric: Uh, Mr. Feeny, the British guy on our couch right there. Mr. Feeny: I'm from Boston, you boob.
Shawn: It's like you and Topanga, a perfect fit. Cory: Yeah, but I didn't fall in love with her luggage.
Shawn: I need chocolate. Debbie: That's 16 grams of fat! And you have a purse! Shawn: Yeah, I do. Cory: That's not really his purse. He found that purse. Debbie: Well, he found an ugly one. Shawn: Hey! I happen to like this purse!
