In this unaired episode only available on the DVD collection,the crew examines Italian craft breweries. A new rooftop brewpub, La Birreria, is opened by Dogfish Head Brewery, and the staff creates a series of specialty beers for the pub.
Sam and the team at Dogfish Head are approached to make a beer from cedar scraps from old surfboards. Meanwhile, the team is put in a major pinch when quality control flags 9,000 gallons of Dogfish's 120 Minute IPA.
Sam wants to wow the folks at this year's Beervana festival, so he travels to Epic Beer in New Zealand to make a new craft beer. Back at the Dogfish Head brewery in Delaware, things go awry when they prepare their annual fall seasonal beer, Punkin Ale.
Sam travels to Peru to find an ancient corn-based recipe for a beer called Chicha. The team at Dogfish Head learns that saliva is used to speed up fermentation, and decide to follow this old recipe to create the brew.
