Hugh has reached the flatlands of the fens where he is feeling a little depressed. Things look up though when he and a hearty band of coppicers tuck into a bowl of nettle soup and a glass or two of wine. His next stop is the beach in Norfolk where he goes in search of the elusive razor clam. Having procured a bucketful, he finds an abundance of Sea spinach and Alexanders which will accompany the sautéed clams. In Yorkshire Hugh teams up with the microphyle Peter Jordan. Together they forage one of Britain's rarest mushrooms, the morel. This extraordinary fungi later is combined with some blanched woodlice for one of Hugh's more exotic recipes: woodland fritters.
