Dexter: (voice over) Any shrink could tell you that's why I've always liked children, because they connect me to what I can never get back.

This is an allusion to "The Goat" sketch by Adam Sandler off his album "What The Hell Happened To Me?" During the sketch, the talking goat says the exact same thing.
Dexter: He's C.S.I.-ing me.
C.S.I. stands for crime scene investigation. C.S.I. is a media franchise of American television programs, all of which deal with forensic scientists as they reveal the circumstances behind mysterious and unusual deaths and crimes committed.
