I wouldn't worry too much about Joss Whedon. If nothing else, people are clamouring for a sequel to Dr. Horrible.
Also, Joss has experience with this (Firefly), and if he gets depressed and quits, well, he needs to have thicker skin to be in this business. And, considering, he's not a newcomer to this, I'm sure he'll handle this in stride.
And, you're right--95% of shows don't make it 26 episodes. Yeah, we'd rather have full seasons, but most of the time, that doesn't happen. And Joss knows how dedicated his fans are. "Firefly" is beloved, even though Fox did everything in its power to make sure it wasn't beloved.
Never underestimate Joss Whedon.
Buffy's first couple seasons weren't all that wonderful. But, they were entertaining. There were a few moments that approached on brilliant, but there were some truly horrible episodes.
However, Buffy and Angel aired on the WB (and for Buffy, later UPN.) I think the WB didn't really care about meddling in their shows. As long as people were watching them, TPTB were fine.
Fox is a known meddler. And I think that's the problem. The first 5 episodes of season 1--even Joss Whedon was giving interviews saying "Just give us until episode 6! That's when things pick up!" He managed to get control, beginning in episode 6.
