Emeril: Roasted garlic. You can't roast that on the bus, huh?
Pat: No, no oven.
Emeril: We're gonna have to get some connection for you.
Pat: I know, I'm gonna get a convection next time.
Emeril: We're gonna get some connections, you know, you're gonna cook for Neil, and I'll just FedEx you a care package, and forget the oven, you know?
Emeril: (constructing the salad) Nice light bacon. Little bit of tomatoes, really light, just wanna use a little olive oil make 'em even a little lighter. (audience laughs) It's practically flying out of my hand right now.
Emeril: One of the tips that I told you I was gonna share with you, is that you wanna get when you're doing this type of lower saturated fat, lower fat cooking, you still wanna get the flavor. So you gotta look for little things to punch the flavors. Roasted garlic being one of 'em, okay, lemon's another thing that comes to mind, curry if you like that, cayenne pepper. You gotta have things that just sort of just pop the flavors.
