      • Bill Taylor: Fats was really on the forefront of the transition between Rhythm and Blues and Rock and Roll. And really, what that transition was, was a White audience starting to listen to Black Rhythm and Blues, and Fats was really the first crossover artist. He was one of the true originators of Rock and Roll.

      • Bill Taylor: Fats can really cook. When he used to travel, he'd go on the road with his band, and he'd bring a handful of hot plates and, you know, ingredients from New Orleans. And he'd cook gumbo and red beans and étoufée on the road, in his hotel room.
