This may be the best choice, but I found that A Room for Joey (it's not my favorite episode but....) was the first episode in which the writers were really getting inside the character's heads. I'm sure some other people will think differently, but I definitely noticed it.   Keep in mind this is in comparison to other early season 1 episodes.

I'd say the eppy where jesse and rebekah really become parents and Jesse knows what it is like to have his own chitluns.

Middle Age Crazy. It was good development for Stephanie because it showed that she's insecure about the lack of attention she gets compared to Michelle and DJ and that being the middle child bothers her.

Probably when Stephenie and Gia became best friends right after they became enemies. I don't if it counts.

I think Fuller House, it made Michelle and Jesse both realize how much they love and need each other
