Spaghetti Surprise Pie 7oz or 200g spaghetti, coked and drained 2tbsp or 30ml butter 1/3 cup or 80ml Parmesan cheese 2 eggs, well beaten 1 cup or 250ml cottage cheese 1 lb or 450g ground beef ½ cup or 113g chopped onion ¼ cup or 56g chopped green pepper ½ cup or 500ml spaghetti sauce ½-1 cup or 125-250ml shredded mozarella cheese Combine hot spaghetti, butter, Parmesan, and eggs. Form into a crust in a 10 inch (25cm) pie plate. Spread cottage cheese over crust. Set aside. Brown beef, onion, and green pepper until cooked. Drain off fat. Stir in spaghetti sauce and spoon over cottage cheese. Bake, uncovered, at 350F (175C) for 20 minutes. Sprinkle mozarella cheese on top, then return to over for 5 minutes. Chip-Chip Hurray Chocolate Cupcakes 6tbsp. or 90ml unsalted butter 1 1/3 cups or 325ml sifted cake flour 1cup+ 2tbsp or 280ml granulated sugar 1/3 cup or 80ml regular unsweetened cocoa powder (non-Dutch process) 1/2tsp or 2.5m baking soda pinch salt ¾ cup or 145ml water 1 egg, graded large 1tsp or 5ml vanilla Super Easy Icing: Mix icing sugar and water in a bowl, until the desired consistency is achieved. Adjust rack to center of the over and preheat to 375F (190C). Line the cups of 12-cup standard muffin tin with paper liners. Melt the butter and cool it until it is warm (it should not be hot when it's added to the batter). Into a medium bowl, sift together cake flour, sugar, cocoa powder, baking soda, and salt. Add water, egg, vanilla, and melted butter. With a hand-held electric mixer at lowest speed (or with whisk), beat ingredients just until combined. Scrape bottom and sides of bowl with rubber spatula. Beat at low speed for 30 seconds. For ease in handling, transfer batter (which will be on the thin side) to a pitcher of about 4cup (1L) capacity (batter will not fill pitcher). Divide batter evenly among line muffin cups; cups will be about two-thirds to three-quarters full. Bake in preheated oven for 14-19 minutes, turning pan back-to-front about halfway during baking time. Cupcakes are done when a toothpick, inserted into the center of a corner cupcake (that is, a cupcake on the corner of the pan), emerges with only a couple of moist crumbs still clinging to it. Do not overbake!! Remove pan to cooling rack. Immediately, but gently, remove cupcakes from pan to cooling rack. Cool the cupcakes completely before frosting. Spread icing on top.moreless
