The Sword in the Stone
While explaining how to safely remove an avocado pit from a knife, Alton refers to the sword in the stone, and the legend that whoever removed it would become king. This refers to the legend of King Arthur, chronicled most famously by Sir Thomas Malory in his Le Morte d'Arthur.

Chef Paul says this after receiving a green ID pass at the entrance to the Beard Home for the Culinarily Challenged.
The line spoofs a long running 1990's series of American Express card commericals (the AmEx card is about the same color as the pass) whose tagline was "Don't leave home without it."
