(nitpick) Although Joseph Whitehorse's horse may have died later from being shot, but it was clearly not dead when they showed it on the ground. It's chest can be seen moving.
Joseph Whitehorse: Before I take a favor, it's only right I should tell you. If I had the money, I wouldn't hire you. I don't hold with men who follow the gun. Paladin: I agree, Mr. Whitehorse, it's not a practical profession.
Paladin: I'm sorry, Mrs. Whitehorse, I don't care to own land, it's a thing that grows to a man's feet, and that's not the kind of life I've chosen for myself.
Rheinhart: Science has absolutely no standing in a community where they still bury chicken heads by the light of the moon to get rid of warts.
Paladin: There's an irritating roughness about the way you people speak that makes me obstinate. You want me to leave town, Mr. McNally. Well, you're the loud spokeman for this community. Wouldn't you like to try?
Paladin: Never draw in anger, Mr. McNally. It slows the hand.
A surprizing tidbit: the first time Paladin is struck in the series is by a woman, Martha Whitehorse.
