Chef Ramsay challenges the teams to create delicious tapas style, or small portioned, dishes out of left-overs. Both teams put in a valiant effort, with Chef Ramsay declaring it the "closest ever." The winning team is sent to enjoy a day at the races, while the losing team completes prep for both kitchens. During this grueling punishment, one chef earns their team's wrath by having to be babysat and threatening to quit. Giovanni was transferred over to the Red Team in this episode.
Rewards Challenge: The chefs had to create tapas style dishes using leftovers. Each chef had to create a dish within twenty minutes. The team with the most winning dishes was the winning team.
Reward: The Red Team won the challenge with a total of three points, just beating out the Blue Team. They were rewarded with a trip to the Hollywood Park Horse Racing.
Punishment: The Blue Team was forced to complete the prep for both kitchens for the dinner service being held that night. Additionally, small plates were sent into the kitchen for the tapas-style dishes and they were required to unload, wash and dry these.
Losing Team: Both teams completed a full service, but Chef Ramsay was nevertheless disappointed. He declared the Blue Team to be the clear losing team, with the Red Team overall having done a reasonably decent job.
Nominees for Elimination: Chef Ramsay asked each of the chefs on the Blue Team to nominate somebody that they felt they could no longer work with. Robert, Danny and Ben all nominated Lacey, while Lacey nominated Robert. Despite Lacey's nomination of Robert, Ramsay asked both Lacey and Ben to step forward.
Eliminated: Neither. Chef Ramsay had already ejected J in mid-service and felt that J's mistakes put the kitchen in such a hole that Ben and Lacey never stood a chance.
Chef Ramsay: I kept Ben and Lacey because J put the kitchen in such a hole that they never stood a chance. They're very lucky that I sent J packing.
Chef Ramsay: Are all four of you capable of working together?
Blue Team: Yes, Chef.
Chef Ramsay: I can't hear it!
Blue Team: Yes, Chef!
Chef Ramsay: Then do it! And do me a favor-- get out, the lot of you.
Lacey: (in an interview segment) **** yeah. I'm still here. And you know what? I'm giving a big (puts both of her middle fingers up) **** you to all these people here.
Chef Ramsay: (regarding Robert and Lacey) So why do you want to get rid of each other? Is there love in the air?
Robert: No, not at all, Chef.
Robert: (to Lacey) Dude, I swear to God, if you win this, I will hang up my coat and become a crack whore, dude!
Narrator: Paula has answered Chef Ramsay's prayers for perfect Wellingtons. Now, he has a question for Ben.
Chef Ramsay: Where's the Wellingtons?
Ben: 5 1/2 minutes.
Chef Ramsay: I'm watching you like a ****ing hawk.
Ben: I know you are, Chef.
Chef Ramsay: Do you know why? You know why?
Ben: I don't know why, Chef.
Chef Ramsay: I want you out. You're not cutting it. You're dreaming.
J: I guess I don't belong here. So I'll be going home. I'm here for a reason and it's, uh, my boy and my wife. So of course I'm disappointed. It was a tough day.
Lacey: (having a breakdown and threatening to quit, again) I get treated like the donkey of the group and I'm supposed to help these people. **** that. I am not going to compromise my health and happiness for ****ing 250 grand. No ****ing way! It's not worth it!
Ben: (in an interview segment) Lacey, get your **** together. This is Hell's Kitchen. This is not the after-school daycare program.
Chef Ramsay: (choosing a horse at the race) I'll go for Stress Free. That has to be my favorite, huh?
Carol: Have you ever had a stress free day, Chef?
Chef Ramsay: I have actually, you know that?
Carol: Have you?
Chef Ramsay: Yeah. On the flight home back to the U.K., Carol.
Andrea: (in an interview segment) I'm psyched out of my mind to have Gio on our team. I definitely think the Spice Rack needed a little testosterone and Gio, heh heh, has an overabundance of it to give.
Chef Ramsay: (to Lacey, regarding her ginger and asparagus soup) Insipid, almost like some camel's ****ed in your pot.
LA: (in an interview segment) I was like, 'Oh, this is going to be easy for me' and it kind of went 'pbht!'
Robert: (in an interview segment) Lacey has no culinary skill whatsoever and I'm getting kind of pissed off that Chef Ramsay is amusing himself by keeping this fat bitch.
J: (in an interview segment) J can make a five course meal out of anything-- leftovers, canned food. You'd be surprised.

The Teflon Don was the nickname of Mafia Capo John Gotti, because many early cases against him by prosecutors couldn't "stick".
Robert: (in an interview segment) I am so sick of Lacey. I'm about to use a Jedi mind trick and just choke the **** out of that bitch mentally.
Robert references a Force power within the Star Wars universe. The force-choke was a technique seen in the Star Wars films used by Darth Vader to punish those with inappropriate loyalty. Using this technique, he could choke someone to death without ever laying a hand on them. Though this technique is most commonly associated with users of the dark side, Sith, it has been used by Jedi as well within the novels of the Star Wars extended universe.
