After a demonstration of the techniques in making ice creams and sorbets with liquid nitrogen, the contestants are given 45 minutes to make six dishes using only fire and water, with the losers cleaning the hot tub and the restaurant's fountain. Later during dinner service, both teams have trouble completing their orders up to Ramsay's standards.
