  • Trivia

    • What is Offal you ask? According to the challenger's web site they are "those parts of a meat animal which are used as food but which are not skeletal muscle."

The term literally means "off fall", or the pieces which fall from a carcase when it is butchered. Originally the word applied principally to the entrails. It now covers insides including the HEART, LIVER, and LUNGS (collectively known as the pluck), all abdominal organs and extremities: TAILS, FEET, and HEAD including BRAINS and TONGUE. In the USA the expressions "organ meats" or "variety meats" are used instead.

Offal from birds is usually referred to as GIBLETS.

  • Quotes

    • Alton Brown: Halloween is in fact one of the Chairman's most favourite holidays, which makes sense considering that he's, well, a little scary himself.

    • Michael Ruhlman: The odours that we're getting up here are extraordinary I think.
Alton Brown: I notice that you say 'odour', not 'aroma'!
Michael Ruhlman: Yeah, it's like really old world up here.
      Alton Brown: Old world.
Cady Huffman: I think old sock!

    • Chairman: You are a highly skilled butcher, and tonight is our Halloween battle, so I must ask, are you really Michael Myers in disguise sneaking into Kitchen Stadium looking to go postal!?
Chef Cosentino: I've been known to go postal.

  • Notes

    • This episode features appearances of Igor and the Monster from the Broadway production of Young Frankenstein.

    • The challenger, Chris Cosentino, is no stranger to Iron Chef America. In season 4 he was defeated by Mario Batali in Battle Garlic and in 2007 made it to the final 3 in the reality competition The Next Iron Chef, only to be defeated by Michael Symon. He currently lives in San Francisco, CA where he is Executive Chef at Incanto Italian Restaurant.

You can learn more about Chef Cosentino, and this battle's secret ingredient, offal, at Chris' official website
