Fans may remember chef Kaysen as a competitor against Iron Chef Michael Symon on The Next Iron Chef. He was eliminated during the third challenge, 'Resourcefulness'.
In 2008, chef Gavin Kaysen won a James Beard Foundation Award for Rising Star Chef of the Year.
This was Masaharu Morimoto's first individual battle of the season. His only other appearance this season was in the Thanksgiving battle that teamed Morimoto with Cat Cora to battle Michael Symon and Bobby Flay.
The challenger, David Kinch, can currently be found creating innovative French cuisine with a Spanish twist at his restaurant, Manresa, in Los Gatos, CA. Chef Kinch finds inspiration from European traditions and refinement, American ingenuity and the vast bounty that California has to offer. Manresa's biodynamic vegetables are grown exclusively for Manresa at Cynthia Sandberg's Love Apple Farm in the nearby Santa Cruz Mountains and harvested in the morning for the evening menu.
Manresa also has the distinction of being one of only a handful of restaurants in Northern California to receive a Two Michelin Stars rating.

For the first time on Iron Chef America there is no challenger for this battle. Instead the Charmain welcomes designer, and frequent ICA judge, Marc Ecko to Kitchen Stadium. Marc is there to unveil the new custom chefs coats he has designed for each of the Iron Chefs.
What is Offal you ask? According to the challenger's web site they are "those parts of a meat animal which are used as food but which are not skeletal muscle."

The wild ride of chef Ricky Moore:
Chef Ricky Moore was originally called and asked if he'd like to compete on the Next Iron Chef program, he said yes of course.
Next thing Moore knows he's been dropped from consideration - but they would like him to be a challenger on Iron Chef America instead.
Which is how Moore ended up competing against Iron Chef Michael Symon in his first battle after winning the Next Iron Chef contest.
Although Chef Moore was working as chef at Agraria in Washington D.C. when he competed on Iron Chef America, he watched the show from the lounge at Indebleu, where Moore was hired the week before his episode aired.
