In the opening war game sequence, MacGyver dodges an authentic explosion from incoming artillery, which is something no one would ever use in a friendly wargame as presented here.

Avalanches at ski resorts don't occur as easily as seen here. Marked ski runs are deliberately built clear of potential risk areas. Any ski resort (and the nearby town as well) that could be devastated by an avalanche caused by a single gunshot simply wouldn't have been built in the first place. Even if extreme weather conditions made an avalanche as likely as seen here, the ski resort would have been closed.
MacGyver uses his spare tire at the gas station to replace his flat, but as he drives off, a fully-drivable spare is still mounted on the back of his Jeep.

When Victoria prepares to shoot Phillips, there's clearly no bullets in at least three of the seven chambers of her gun. There's no reason she'd be carrying a half-empty gun in a situation where she plans to shoot people. She's only fired one shot to date, which means even if she forgot to reload there should only be one empty chamber.
When the Cadillac finally broke down, it stopped against a mound of dirt and weeds. Yet when MacGyver pushes it forward, the mound is not there.
When Talbot picks up the trail of the Cadillac, there's a steady stream of oil behind them, and leading ahead to the Cadillac. However, when MacGyver pushes the Cadillac downhill and hops in, there's no sign of oil leakage on the road.
The Cadillac that gets struck by gunfire seems to show no evidence of the attack later in the episode.
As MacGyver maneuvers his hang glider for a landing on a rock, the hat he's wearing changes.
As Jack flies, his plane has no logos on it, but after he lands there suddenly are circles on either side on the nose.
MacGyver and Jill dangle over an acid bath and breathe the fumes for an extended period, in a confined space. They're totally unaffected despite the fact acid fumes are highly toxic.
When MacGyver and Dr. Jill Ludlum are figuring out how to escape from the receding floor, MacGyver takes off his shoes and then takes off his pants. He uses his pants to hang from a pipe that runs across the room. However, when MacGyver and Dr. Jill Ludlum are hanging from the pipe, MacGyver has his shoes back on.
