Although Capcom never officially stated exactly who defeated Bison at the end of 'Street Fighter 2', logic would hint that he was either beaten by Chun-Li or Guile. In this episode, it relies on Guile and Chun-Li finally getting their revenge on Bison. They directly oppose him and both their endings heavily rely on them either defeating him directly or destroying the Shadaloo organization (even Ken and Ryu's endings can be achieved without them defeating Bison). Chances are, Bison was defeated by Guile (Chun-Li claims, in the Super Street Fighter 2 Turbo Revival Game Boy Advance Game, that she only destroyed Shadaloo, not Bison). So it is heavily thought that Guile was the one who beat Bison. In the game, per the request of his wife and daughter, Bison is spared from Guile killing him, but shortly after, Bison wound up getting murdered by Akuma. Edit
