Chef Carmen Gonzalez of New York City's Lucy of Gramercy joins Martha today to share her savory recipe for Plantain-Stuffed Pork Loin and sweet recipe for Coconut Tembleque with Mango-Kumquat Relish. Maricel Presilla is a culinary historian and author specializing in the cuisine of Latin America and Spain. Maricel is the president of Gran Cacao Company, a Latin American food research and marketing company that specializes in the sale of premium cacao beans from Latin America. She is also the co-owner and chef of Zafra, an eight-year-old pan-Latin restaurant in Hoboken, New Jersey. Four years ago, she opened Cucharamama, a South American restaurant, also in Hoboken. Both of Maricel's restaurants have menus that reflect her travels and experiences, bringing together her love for Latin America and Spain. They have both received a rating of Excellent from the New York Times. In 2007, Maricel was nominated for Best Chef for the Mid-Atlantic Region by the James Beard Foundation. Today, she joins Martha to make Slab Bacon in Hot-Pepper-and-Brown-Loaf-Sugar Adobo.
