    • This episode was also known as "Alton's Classroom."

    • As regular Food Network viewers know, Alton Brown had a ten-year career as a cinematographer/video editor before giving it up to attend the New England Culinary Institute. Additionally, Brown was chosen the Bon Appetit Magazine Cooking Teacher of the Year in 2004, and brings extensive background as a culinary and television expert to the challenges this week.

    • Challenge #10: Three Ingredients (On-Camera Demo)
      Each finalist must select at random one protein, one vegetable and one additional item on which they must base a dish. Following preparation, each chef must "sell" their dish in a three-minute demonstration, with no camera stops. Afterward Alton Brown provides feedback.

      Rory: Minute steak, radishes, prunes
      Jag: Shrimp, snap peas, corn flakes
      Paul: Calamari, fennel, persimmons
      Amy: Veal, oyster mushrooms, popcorn
      Adrien: Flounder, japanese eggplant, peanut butter

    • Challenge #11: Least Favorite Ingredient (On-Camera Demo)
      The finalists must design a dish that will glorify their least favorite ingredient, to be presented in a five-minute on-camera demo. The script included four items of information, and a clear beginning/middle/end.

      Amy: Bok choy
      Jag: Tofu
      Paul: Lima beans
      Rory: Goat cheese
      Adrien: Baby corn

      Winner: the judges determined no winner could be selected, but noted Paul showed the greatest improvement from the first to second demonstration, saving him from elimination.
