Kevin: (about his dish) It represents my culinary point of view, being a single guy who likes to date and romance, and hopefully one day fall in love. I think the crostini is sexy.
Jeffrey: I have no idea what is romantic about a crostini.
(Adam has suggested a skit for their presentation.)
Aaron: I said, "Oh, hell no!" I'm from Camden; I'm black. And I'm not robbin' no train, and I'm, like, "He's crazy if he think I'm going out there to do this." I'm not even funny.
Kevin: (of his team's ingredients) We have semolina raisin bread, a big ball of fresh mozzarella, and a duck breast. We could be in trouble.
(Nipa is still getting ready, while the other teams have left already.)
Shane: It's not being a team player when you know we have a team challenge, and you're moving like a slug.
According to Susie Fogelson's vlog, the reason Nipa gave the judges for storming off the set was that she hadn't realized they would be so mean. Bob and Susie were hurt because they feel that's the last thing they bring to the competition. Bobby was offended because he felt she didn't appreciate the opportunity she'd been given.
She also addresses why Nipa was not eliminated. The feeling the committee had was that Nipa's point-of-view was attractive and very marketable. She's certainly on the fence after her outburst, but the one who was eliminated had a point-of-view that "sucked" and didn't bring passion to the presentations.
This episode was filmed in January, before Robert Irvine's fall from grace when it was discovered he'd padded his resume and was subsequently fired by the network.

It appears that the staging site for the train challenge was the Whippany Railroad Museum. The train used was likely one of the ones used during the summer, Easter and Christmas for themed scenic excursions.
