During Battle Chicken with Amy and Jag, the burning fat from Jag's chicken set off the smoke alarms. Alton Brown noted that during Iron Chef America they often use theatrical smoke to add atmosphere, but this was the first time they'd had real smoke on the set.
The Iron Chef battles take place at the Institute of Culinary Education, a notable school of culinary arts in New York City.
Bob: (When the judges finally reach a decision about who will be eliminated) The is officially the hardest decision we have ever had to make.
(Alton Brown quizzes Paul about the San Marzano tomatoes in use during Battle Chicken)
Alton: Where are they from?
Paul: (Clueless, despite the information on the can) Plummy!
Alton: (Surveying Paul and Rory's stations) Looking at the two stations: Paul's station, nice and neat. Rory's station: Texas tornado coming through!
Rory: (After AB noted she'd left out some information he needed, in a failed attempt at humor) It's hard to get your attention. You're talking all the time!
Jag: (After fluffing his answer to AB's question) I'm not interested in competing with Alton on ingredients. You can't. He's the almanac.
Bobby: (Watching Amy's commentary) She's good!
Challenge #12: Iron Chef Battle

Battle #1: Paul versus Rory
Secret Ingredient: Striped Bass
Sous Chefs: Adrien (Rory) and Michael (Paul)
Battle #2: Amy versus Jag
Secret Ingredient: Chicken
Sous Chefs: Tommy (Amy) and Colombe (Jag)
Challenge #13: Iron Chef Commentary
The finalists not engaged in a battle were charged with floor commentary to accompany Alton Brown. This challenge was designed to allow the finalists to show their food knowledge as well as their camera skills.
Unlike other episodes, the Iron Chef challenges (commentary/battle) run concurrently, with two finalists doing commentary for the remaining two finalists' battle. The two challenges were given equal weight when evaluating the overall success of the finalists.
Winner (combined challenges): Amy
