    • Since Rick and Anita tied in the Quickfire, Rick was allowed to pick his first sous chef before Anita, and then Anita went before Rick on her second and third choices.

    • Jay: You're on a challenge, and there's various things at stake, not to mention quite a lot of money for your chosen charity, and you decided to go with the other guy's idea. Cojones is the word that comes to mind.

    • Fabio: I'm sweating like a mountain goat at the beach, and she's telling us we need to get rid of one chef. Oh, God!

    • Michael: For the first twenty years of my career, I ate three Dales for breakfast everyday. He is way out of his league.

    • Fabio: (referring to Michael) I can tell that this dude is Italian, 'cause he's making everyone running around him like chicken with no head.

  • Notes

    • When asked, Dale said that there were several elements of his confrontation that really made him angry- there were no set refrigerators for the teams, so Michael Chiarello had no right to demand the use of particular units. But mainly he was angered to be called "young man"- the sous chefs were expected to know Chiarello's name, but he didn't take the trouble to learn anyone else's, even though they were wearing name tags which should have made it simple.

    • Kelly says in her blog that this was her favorite episode, since she had gotten to know all of the competitors quite well by this point, and the mechanics of the Quickfire Challenge also let her get more up close and personal with the chefs.

    • Between tastes of ingredients in the Quickfire, the chefs were allowed to cleanse their palates with water, lemon wedges, and pieces of bread.
