Casey's winning QuickFire dish was paired with a Strawberry Balsamic Rickey, but she didn't know what was in it. It's the lime juice that makes the drink a Rickey.
Strawberry Balsamic Rickey:
1.5 oz Bombay Sapphire
6 diced strawberries
1/4 oz of good quality aged balsamic vinegar
Drizzle of sugar syrup to taste
Twist of lime
1. Muddle the chopped strawberries and dump into shaker.
2. Add the other ingredients and ice, shake vigorously.
3. Double strain into a rocks glass filled with fresh crushed ice.
4. Add garnish
The Guest Judge for the QuickFire Challenge is Jamie Walker, who is the Global Master Mixologist for Bombay Sapphire Gin.
In her exit interview at Bravo's website, Camille says she made three mistakes in making her pineapple upside-down cake. First, she over mixed it, second, she let it rest too long before baking, and third, she added too many whipped eggs whites to try to fix the second problem. Over mixing gives a batter or dough a tougher consistency; batters should be allowed to sit to let the baking powder add airiness, but wait too long and the batter will collapse back on itself. Adding whipped egg whites will give back some airiness and structure, but too much will make the final product hard like a meringue.
