Both Tom and Gail mention in their blogs that they had met Joe Jonas at a White House reception while taping Top Chef's previous season in Washington. Joe made a point of telling them he was a big fan of the show, and was knowledgeable about cuisine, so they weren't at all surprised to learn that he was going to be asked to Guest Judge in this episode.
According to Tom's blog, after Tiffani and Spike made their choices, a Producer came and explained to them all in greater detail the parameters of the upcoming Challenge, so there's absolutely no way she could have gone into the kitchen and expected to find anything other than meat or dairy unless she and all of her teammates failed to pay attention to what they were told.
Tom defends Jamie's decision to get stitches in his blog at Bravo's website. According to him, she had never been cut badly enough to be told that she needed stitches before, so when the medic told her she'd be needing them, she was panicked a bit, and deferred to the medic's opinion.
