    • Mark: A few people go for shrimp straight off the bat, and I thought, you know, they're really taking my gig. How can I 'throw a shrimp on the barbie' when they're already doing it?

  • Notes

    • Chef Tom Colicchio says that this was one of his favorite Challenges of season four, but he admits that a big part of it was the chance to meet Gayle Sayers, a football player he grew up watching and admiring.

    • Koren Grieveson, the QuickFire guest judge, is (somewhat ironically) Chef de Cuisine at Avec, a wine bar in West Loop Chicago.

      Paul Kahan, the Elimination guest judge, is the chef and owner of both Blackbird and Avec. The former specializes in "internationally influenced" American cuisine.

    • Lee Anne says she loved Dale's potato salad (which accompanied his winning ribs) so much that she consumed an entire quart in one sitting when she took the leftovers from her Bravo website feature The Wong Way to Cook from this episode home.

    • Padma said this beer QuickFire was easier on her than the Bombay Sapphire mixed drink Challenge in season three, because unlike then, she didn't get drunk. She did, however, entertain the cast and crew by burping a lot.

    • According to Lee Anne, Bravo had a "decoy" tailgating station set up serving burgers and hot dogs manned by all the eliminated chefs.
