    • Nikki complains that her mayonnaise "isn't breaking", and she needs to take a breather to regroup. But "breaking" is the last thing you want to have happen- that means that the egg yolks and the oil are no longer emulsified, and have separated!

    • Immunity is no longer the prize for the QuickFire Challenges from this point on this season. The rewards will be advantages tailored to the specific Elimination Challenges.

  • Notes

    • When Lee Anne suggested turning artichokes for the mise en place relay, Chef Colicchio was skeptical, thinking it was too hard and would take too long. She and Tom turned a few artichokes together in the production offices, and Tom was convinced it would work.

      The venue used for the elimination challenge is owned by the groom. The restaurant portion of the complex served only lunch, and that for a limited time (11:30 am-2:30 pm) at the date of broadcast.

      The bride and groom shifted their wedding forward by six months and moved its location from Kansas to Chicago in order to be on Top Chef – they're fans of the show.

  • Allusions

    • Stephanie: I made sure not to put any eggshells in the cake.

      Stephanie is referring to season one's episode "Wedding Bell Blues", in which one of the guests found an eggshell in his slice of cake.
