Sauté plantains in oil over medium heat. Once cooked, smoosh them in a bowl like chunky mashed potatoes. Add the butter and mix. Add salt to taste. Set aside. Return the pan to medium heat. Add olive oil. Add raisins, green olives, garlic, bell peppers, onions, and tomatoes. Sauté until onions and peppers are tender. Add tomato paste, vinegar, salt, pepper, cumin, chili, achiote powder and ground chuck beef. Cook together until beef is done. Set mixture aside. Preheat oven to 350 degrees. Get a lasagna pan and spray with Pam. Whip the 6 egg yolks in a bowl, then put a thin layer of egg in the bottom of the pan. Add a thin layer of plantains, then beef, then Parmesan cheese. Top with more plantains; rub with more egg yolk, then another layer of beef and then Parmesan cheese. Repeat until the pan is full. Place lasagna pan in the oven and cook for 30 minutes.
