Season the steaks liberally with salt and cook on a grill over hot coals, about 2-3 minutes per side, on all sides. Let the steak rest in a 350-degree oven, cook until desired degree of doneness (about 8 minutes for medium-rare). While the steak cooks, place a large sauté pan over medium-high heat and add clarified butter and mushrooms. Once the mushrooms begin to soften and give off moisture, add the pre-roasted cippolini onions. Once warmed through, add in the fig essence and toss to coat. Arrange the onion/mushroom mixture on the center of the plate and place the sliced filet over the top of the mixture.
